UNLV researcher explores strawberry’s role in diabetes prevention and cardiovascular health

Dr. Arpita Basu, a registered dietitian and associate professor at UNLV, has been researching the health benefits of strawberries for over a decade. She is particularly interested in how strawberries can reduce the risk of diabetes and improve metabolic and cardiovascular health. Strawberries, being red in colour due to various plant pigments, are packed with bioactive compounds that contribute to these health benefits. Studies have shown that incorporating strawberries into one’s daily diet, even half a cup, can significantly improve blood cholesterol levels, potentially reducing the risk of heart attack and stroke. Dr. Basu emphasises the importance of viewing food as a form of medicine, urging people to eat more fruits and vegetables to combat rising health concerns like pre-diabetes and diabetes.
