CSIR-CFTRI introduces three new food technologies for healthier choices

CSIR-Central Food Technological Research Institute (CFTRI) has released three new technologies as part of its ‘One Week One Lab’ (OWOL) campaign. The institute, which has developed a total of 20 new technologies, aims to release all of them during the campaign. The technologies released include spiced bread with anti-inflammatory properties, gluten-free cake mix, and fibre-enriched rusk. CFTRI highlights the importance of improving the functionality of wheat-based food products to combat lifestyle disorders. The institute emphasises the use of functional ingredients from natural sources to enhance the health benefits of bakery products and combat immune-related diseases. The gluten-free cake mix targets celiac patients and offers higher nutritional quality compared to existing products on the market. The release of these technologies contributes to promoting healthier and more convenient food options.
