Well-Fed Ed: Plant-based food truck promotes health and education

Lucas McLawhorn, a former teacher, has launched Well-Fed Ed, a plant-based food truck with an educational focus. He aims to teach others about the benefits of eliminating meat and dairy from their diets. Despite the truck being vegan, McLawhorn prefers not to use labels, believing they divide people. His journey towards plant-based eating began when he experienced excruciating back pain, later discovering it was due to testicular cancer. During chemotherapy, he learned about the impact of food on health and decided to adopt a meat-free diet. McLawhorn believes that nutrition plays a vital role in preventing and fighting diseases like cancer. Through Well-Fed Ed, he promotes plant-based foods and their health benefits, sourcing vegetables from local farmers. The menu features creative dishes such as a southwestern cheese-less pizza and a Middle Eastern hand pie, all made from scratch. McLawhorn emphasises the importance of education, regularly visiting classrooms and providing meals for teachers who order from his menu.
